Recipe: Pan-Roasted Chicken With Lemon-Garlic Green Beans

Today, while trying to decide what to make for dinner (meal planning fail), I noticed a friend of mine had posted a photo on Instagram of this dish. Just having purchased chicken breasts at the grocery store, that part was covered. I had green beans in the freezer and sweet potatoes rather than baby reds on hand. I also had a packet of Garlic Herb (Knorr) sauce mix in the pantry and a bottle lemon juice. We'll call it improvisation!

I simply tossed the veggies, potatoes and chicken in the sauce mix powder (instead of the spices suggested), olive oil and lemon juice and proceeded with the recipe instructions. Pre-baking:


The house smelled amazing as it baked! When I pulled the baking dish out of the oven I could tell everything was cooked perfectly and immediately tasted a piece of both potato and bean...yum!!!



Easy and delicious. Perfect for this rainy, fall evening. My husband proclaimed it one of my best dishes ever and asked me ti make it again, exactly the sane but, doubled. Jack agreed!
